Produce – The Science of Fresh Produce

The life of produce begins with the planting of a seed or a bloom on a tree. As the seed grows into a plant or that bloom grows into a bud, temperature, light and humidity factor into the development of a fresh, healthy fruit or vegetable. As it is growing, produce is living and breathing. Once harvested, it begins the dying process.
The role of the produce specialist is to prolong the life of the fresh fruits and vegetables after they arrive at the store.
